Chickpea Coconut Curry



A rich coconut curry broth with ginger, garlic and Indian spices in coconut milk, tossed with chickpeas.

It's a hearty vegan dish, and I promise you, you won't even miss the meat!

It's a feel good , healthy and delicious meal!


For this recipe, you will need:


  • 1 tablespoon vegetable oil

  • 1 tablespoon garlic ginger paste

  • 1 onion

  • 1-2 bay leaves

  • 1 1/2 tablespoons of Garam Masala (we make our own, see our recipe below)

  • 1 teaspoon red chili

  • 1 tablespoon turmeric

  • 1/2 - 1 teaspoon cayenne pepper

  • 4 tablespoons stewed tomatoes

  • 2 cups coconut milk

  • 3/4 cup water

  • 3 cups cooked or canned chickpeas

  • chopped cilantro


Garam Masala mix (use a grinder or a mortar and pestle to grind your spices)


  • 1 1/2 teaspoon coriander seeds

  • 2-3 cardamom pods

  • 1 1/2 teaspoon black pepper

  • 1 teaspoon cinnamon

  • 3-4 cloves

  • 1/2 teaspoon nutmeg

  • 1 tablespoon cumin seeds
