For this recipe you will need:
4 cups flour
1 teaspoon salt
1 tablespoon vinegar
4 tablespoons oil
1 1/2 cups water
1 medium onion, chopped
1 carrot, chopped
1 celery, chopped
2 tablespoons olive oil
2 tablespoons tomato paste
fresh chopped oregano
salt and pepper
chili flakes (optional)
1- 1/12 cups red wine
1 cinnamon stick
1 teaspoon sugar
2 eggs, beaten
1/2-3/4 cup of Kefalotiri or Parmesan or any
good sharp cheese, grated
olive oil for brushing filo
