Matzo Ball Soup

One of the most famous soups of the Jewish cuisine, is the Matzo (or Matzah) Ball Soup, which also happens to be one of my favorite soups!

Matzo balls are essentially dumplings made out of Matzo meal, beaten eggs and some type of fat, boiled in chicken soup and the dish is usually served during the Jewish Passover.

The traditional recipe asks for the use of seltzer with whipped egg whites but I prefer to use baking powder instead, because it makes the Matzo balls to turn out to be fluffier and airier! The soup itself is traditionally made with veggies and pieces of chicken but I used a basic mirepoix and chicken stock.
