This dish could also be made with beef, chicken or octopus.
Serve with wine and good crusty bread to mop up that delicious sauce!
For this recipe, you will need:
1 rabbit into pieces
20-25 shallots
3 sliced onions
12-14 unpeeled garlic cloves
2 tomatoes
8 oz. boiling water
1 cup red wine
1 teaspoon sugar
bay leaves
salt and pepper
Spice pouch
cheesecloth
1 sprig or tabelspoon rosemary
10 pieces allspice
10-12 peppercorns
1 cinnamon stick
5-6 cloves
1 tablespoon cumin
